A Greek feast for your summer holidays

At this time of year it’s fun to try out new family recipes, and being big fans of extra virgin olive oil, we can’t go past healthy recipes from the Mediterranean.

When you think of Mediterranean food, it’s hard not to imagine your favourite pastas, pizzas and salads, with lashings of Australian Extra Virgin Olive Oil (AEVOO), but for something different, why not introduce a few simple Greek recipes into your summer repertoire?

Greek food is fresh, delicious, and oh so good for you, so we’ve put together the ultimate Greek feast for you to try this summer with the whole family…

Tzatziki with Pitta

Tzatziki is a refreshing and healthy summer dip that’s good for you and easy to make.

Simply mix a cup of full fat Greek yogurt with one clove of crushed garlic, a squeeze of half a lemon and chopped chives.

Season with cracked pepper and a pinch of salt and drizzle with Australian Extra Virgin Olive Oil (AEVOO), and serve with pitta bread gently toasted in the oven with a drizzle of AEVOO.

Lamb Souvlaki

Love yiros? A homemade lamb souvlaki is a fresh and healthy family alternative, which is not only delicious, it’s quick and easy to make.

Simply marinate two large lamb backstraps in lemon, garlic and AEVOO, before charring them on the barbecue for 4 minutes on each side until cooked through, but still pink and tender in the middle.

Let the meat rest while you chop cucumbers, slice fresh tomatoes and red onion, and cube Greek feta for the filling.

Finely slice the meat and wrap up with the salad and feta in fresh pitta bread. Finish by topping with your homemade tzatziki.

Serve with a dollop of full fat Greek yogurt and a glass of Ouzo to help with digestion!
